Bread, pizza and savoury bases: Terra vegan series by Nemo – Vol. 7 – uk english version

Bread, Pizza and Savoury Bases is a journey into the heart of essential cuisine: that which comes from flour, water, air and time. In this volume, Nemo restores the most authentic dignity to the act of kneading dough – not as an archaic ritual, but as an act of freedom and awareness.
In this vision, bread is not a product to be replicated but a living organism: a natural transformation in which the material speaks and the hand responds. Each dough is a story of balance between energy and stillness, between the breath of fermentation and the heat of the domestic oven.
The book brings together recipes created for real life: breads, pizzas, focaccias and savoury bases that can be prepared in two hours, without biga or pre-ferments, but with method, precision and respect. All the recipes have been tested with simple ingredients, common tools and times compatible with everyday life. The result is a replicable, practical method free from technical rigidity: the Terra Vegan Method.
Each page guides the reader step by step, explaining how to obtain light, fragrant and digestible doughs even with wholemeal or alternative flours. It illustrates heat management, the use of refractory stone, cast iron pots and steam, as well as little tricks that make the oven a true creative ally.
The recipes range from common bread to ciabatta, from focaccia to high-hydration pizzas, to breadsticks, tigelle, piadina and bases for savoury pies. They all follow the same philosophy: speed, authenticity and respect for the ingredients. No theoretical formulas, just concrete results that can be replicated in any kitchen.
Beyond technique, Pane, Pizza e Basi Salate is a reflection on time: on the importance of stopping, listening and understanding the natural processes that transform flour into nourishment. Kneading becomes meditation, an act of trust, a dialogue between hands, h s and living matter.
This volume combines artisan experience and the ethical vision of a cuisine that does not exploit but celebrates. It is an invitation to rediscover the pleasure of baking, the aroma that fills the house, the silence that accompanies the first bite.
With clear language and a progressive structure, the book makes plant-based bread making accessible even to those with no experience. It is designed for those who want freedom, authenticity and true taste – without compromise, without endless waiting, without unachievable recipes.
In these pages, bread returns to what it has always been: life, warmth and gratitude.
